Summer is a time for fresh flavors and refreshing foods: but it doesn’t last forever.  If you’re eager for one last delicious taste of summer and aren’t sure what you want: consider making it yourself!

Each of these tropical recipes gives you the chance to make a unique and delicious tasting treat or meal that will keep summer alive on your tastebuds!

What Flavors Make Something Tropical?

Tropical flavors allow the average American to think of vacation and summer, sitting near a beach in the sunlight.  The most common flavors that bring this feeling out are fruity flavors like pineapple, citrus fruits, and mango, along with coconut and some twist of heat like chili peppers.

Combine this with a more raw approach, like raw fish, raw salsa, or fresh fruit, and you get the perfect combination to create a delicious tropical dish.  If you don’t want to try any of these three recipes, consider making your own combination of these flavors! 

Medium Difficulty: Salmon Avocado Poke Bowl

Raw fish isn’t for everyone, but the important part of this dish is that you get it as fresh as possible.  To make this, cook and chill whatever fresh rice you like.  Don’t chill it for more than an hour because we don’t want it to get hard, just cold.  Serve with fresh greens, sriracha, mayo, or soy sauce and sesame oil, depending on your tastes.  When you chop your avocado, make sure to drizzle lemon or lime juice on it, so it stays bright green and fresh looking. 

Extra Difficulty: Sweet Heat Chicken With Coconut Rice and Mango Salsa

To make this, you can take the time to create your own mango salsa, or you can buy it pre-made: but the main star is the chicken.  Coat your chicken in mango pepper jelly, and bake until it reaches at least 165 in the oven.  The rice is easy to make!  Using your favorite rice cooker, combine two cups of jasmine rice, a can of coconut milk, and a cup and a half of water with salt and sugar to taste.  Dish up with some toasted sesame seeds, and enjoy this refreshing summer meal! 

No Difficulty: Tajin Watermelon Skewers

One of the best ways to get a last taste of summer while also ensuring you don’t have to spend too much time in the kitchen is making tajin watermelon skewers!  For this, all you need is watermelon, tajin, skewers, and possibly a grill.  Cube your watermelon into one to two-inch chunks, and then slide it onto your skewers.

Sprinkle tajin on, depending on how much spice you can handle!  It’s not necessarily hot-spicy, but it is flavorful and packs a punch that tastes like summer. 

You can grill these to get a smoother and almost silk texture from the watermelon, but it’s not necessary!

Summer Doesn’t Have to End Yet.
