To make this, you can take the time to create your own mango salsa, or you can buy it pre-made: but the main star is the chicken. Coat your chicken in mango pepper jelly, and bake until it reaches at least 165 in the oven. The rice is easy to make! Using your favorite rice cooker, combine two cups of jasmine rice, a can of coconut milk, and a cup and a half of water with salt and sugar to taste. Dish up with some toasted sesame seeds, and enjoy this refreshing summer meal!
No Difficulty: Tajin Watermelon Skewers
One of the best ways to get a last taste of summer while also ensuring you don’t have to spend too much time in the kitchen is making tajin watermelon skewers! For this, all you need is watermelon, tajin, skewers, and possibly a grill. Cube your watermelon into one to two-inch chunks, and then slide it onto your skewers.
Sprinkle tajin on, depending on how much spice you can handle! It’s not necessarily hot-spicy, but it is flavorful and packs a punch that tastes like summer.
You can grill these to get a smoother and almost silk texture from the watermelon, but it’s not necessary!
